Fruit and Yogurt Parfaits
Very easy and elegant dessert for entertaining
ingredients
- 1c sugar
- 6 Tbsp cornstarch
- 1/2 tsp salt
- 4 c milk
- 4 eggs, lightly beaten
- 3 tsp vanilla
- 1 1/2 c fresh strawberries or blueberries
- 2 ripe peaches, peeled and sliced
- Whipped cream
directions
In saucepan, combine sugar, cornstarch and salt. Stir in milk until smooth. Bring to a boil over medium heat, cook and stir 2 minutes or til thickened. Remove from the heat. Stir a small amount of hot mixture into eggs; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; stir in vanilla. Cover and refrigerate until chilled. In 6 parfait glasses, layer 2 rounded tablespoons of custard, 2-3 peach slices and 2 Tbsp blueberries or strawberries; repeat layers. Top with whipped cream.

Can make custard and chop fruit ahead of time; assemble parfaits just before serving
