Mama Sitas Carnitas
These are bueno to munch on and will spicen up any gathering!
ingredients
- 1 1/2 lbs. boneless pork loin, cut into 1-inch cubes
- 3/4 to 1 onion, finely chopped
- 1/2 cup reduced sodium chicken broth
- 1 tablespoon chili-powder
- 2 teaspoons ground cumin
- 1 teaspoon dry oregano
- 1 4oz can of diced chiles
- 1/2 tsp minced chipotle pepper in adobo sauce
- Tabasco Chipotle pepper sauce
- 1/2 cup pico de gallo
- 3 tablespoons of fresh chopped cilantro
- 1/2 teaspoon salt
- 1 tablespoon Adobo All-Purpose seasoning
- 12 corn tortillas
- shredded sharp cheddar cheese
- sour cream

1. Combine pork, onion, broth, chili powder, cumin, Adobo, oregano, and chipotle pepper in Crock-Pot. Cover and cook on low for 6 hours or until pork is tender.

2. Shred pork with 2 forks; stir in pico de gallo, diced chiles, cilantro and salt. Cover and keep on warm until serving.

3. Top each tortilla with some pork and garnish as desired with Cheddar cheese and sour cream. Add a couple drops of Chipotle Tabasco and some Cholula or your favorite hot sauce.
