Escalloped Potatoes

ingredients

  • 2 lbs frozen hash brown potatoes
  • 1/2 pinto commercial sour cream
  • 1 can cream of celery soup
  • 1 can cream of potato soup or cream of chicken may be used.
  • 1 medium green pepper (chopped fine- optional)
  • 1/2 cup onion (chopped fine)
  • 2 cups American cheese (shredded-may use Velveeta)
  • Fresh ground pepper (no salt)

    1. Mix the soups, pepper, onion, cheese and sour cream. Blend wit the hash brown potatoes and put in a 9 x 13 inch casserole which has been sprayed with Pam.

    2. Top with the crushed cornflake crumbs and parsley or buttered crumbs. Bake at 300° for 1 1/2 hours.
