Escalloped Potatoes
ingredients
- 2 lbs frozen hash brown potatoes
- 1/2 pinto commercial sour cream
- 1 can cream of celery soup
- 1 can cream of potato soup or cream of chicken may be used.
- 1 medium green pepper (chopped fine- optional)
- 1/2 cup onion (chopped fine)
- 2 cups American cheese (shredded-may use Velveeta)
- Fresh ground pepper (no salt)

1. Mix the soups, pepper, onion, cheese and sour cream. Blend wit the hash brown potatoes and put in a 9 x 13 inch casserole which has been sprayed with Pam.

2. Top with the crushed cornflake crumbs and parsley or buttered crumbs. Bake at 300° for 1 1/2 hours.
