Brunch - Ham 'n Cheese Broccoli Quiche
A wonderful quiche! Make with either swiss or cheddar cheese. Try each and then decide. Great for evening meal as well.
ingredients
- Pillsbury All Ready Pie Crust (in grocery by the rolls and biscuits)
- 1 tsp flour
- Filling:
- 2 cups (measure before blanching) fresh broccoli florets, blanched and well-drained
- 1/4 tsp salt
- 1 cup deli ham (higher quality w/o much water content)
- 1 1/2 cups (6 oz) shredded swiss or cheddar cheese
- 1 cup half/half or whole milk
- 4 eggs, slightly beaten
- 1/2 tsp dry mustard
- dash of ground pepper
- 1-2 tbsp finely chopped onion

Preheat oven to 350 degrees

Use a 9-inch pie pan. Prepare one of the two pie crusts according to package directions. The other crust can be refrigerated for use later.

Cut florets and first inch of stalks of broccoli into pieces that are not very large. Start with 2 cups, it will blanch down. To blanch broccoli, put small amount of water in dutch oven or large sauce pan. Bring water to boil over high heat. Put in broccoli and salt. Cover and cook for 4 minutes. Drain very thoroughly, then lay in paper towel.

Into medium bowl, break one egg. Add dry mustard and whisk the two together. Then add other three eggs, half/half (or milk) and pepper. Whisk loosely and set aside.

Layer in ham (just break it into pieces), then cheese, then broccoli, then onion. Give egg mix a quick whisk and pour gently over layers.

Bake for 50 minutes at least. The center needs to be set and knife inserted in middle comes out clean.

Cool for 5 minutes, cut into wedges and serve.

It doesn't take much longer to make two quiches at once. Great meal to take to a family with new baby or illness. Good leftover-either warmed or cold.
