PHILLY CHEESE SANDWICHES

ingredients

  • 1 Green Pepper, cored and thinly sliced
  • 1 large Onion, thinly sliced
  • 1 jar sliced Mushrooms, drained
  • Olive Oil for sautéing
  • 1/2 lb. Deli Roast Beef (Boar’s Head preferred), shaved
  • 1 Tomato, thinly sliced
  • Lettuce, chopped
  • Pepperoncini Peppers, sliced
  • 6 thin slices Provolone or Swiss Cheese
  • 2 Hoagie Rolls
  • Mayonnaise
  • Italian Dressing
  • Salt & Pepper

    Sauté green pepper and onion slices in olive oil in a large fry pan over high heat, stirring often, until soft and slightly browned. Add mushrooms and combine. Put roast beef on a cutting board and roughly chop to separate. Add to green pepper mixture in fry pan and heat through.

    Turn off heat. Leaving the mixture in the pan, separate it into two parts, shaping to fit buns. Lay cheese slices on top of each pile and cover pan to melt cheese.

    Cut each roll in half lengthwise and scrape out some of the inside. Put the rolls under the broiler and lightly brown the insides.

    To assemble the sandwiches, put mayo on the rolls and then the meat/cheese mixture. Top with tomatoes, lettuce, and peppers. Sprinkle with salt and pepper and add Italian dressing to taste.
