Old Fashion Eggnog
ingredients
- 6 med eggs
- 1 cup heavy cream
- 1/2 cup fine sugar
- Pinch ground cinnamon
- 1/2 cup brandy
- 1/8 teaspoon vanilla extract
- Grated nutmeg for garnish
- Grated chocolate
- 1 pt. milk

In a Med bowl, beat the egg yolks until pale yellow and thick (2-3 min.)

In a Large sauce pan combine

Milk, 1/4, cup sugar, Vanilla, Bring to a boil

Slowly pour in 1 cup of the hot milk mix into yolk mix. Whisking constantly

Then pour the rest of the Yolk mix in the saucepan while whisking

Cook for about 5 min to thicken.

Strain through a fine mesh strainer into a clean container.

Cover with a plastic wrap pressing down against the surface to keep slime from forming. Refrigerate 4 hours or overnight.

In a large bowl, beat the egg whites with an electric mixer until sort peak starts to form

Slowly add 1/8 cup of the sugar and beat until it peaks from cream.

In an ice cream pail combine the chilled egg yolks mix and add brandy.

Fold in the sweet whipping cream then the egg whites. Refrigerate until cold about 30 min. to 60 min.

Sprinkle nutmeg over the top and then a bit of chocolate shavings

Serve chilled.
