Fluffy Potato Casserole
ingredients
- 4 c. mashed potatoes
- 2 (8oz)pkg. cream cheese
- 1/2 c. chives
- 4 egg whites
- 3 Tbls. flour
- salt, to taste
- pepper, to taste
- 2 cans french fried onions
directions
Put potatoes in mixer; add cream cheese, eggs and flour. Beat at medium speed until light and fluffy. Taste, then add salt & pepper. Add chives and beat a minute longer. Spoon into buttered casserole dish and sprinkle dried onions on top. Bake at 300 degrees for 35 minutes
