Chocolate Chip Pumpkin Bread

ingredients

  • 2 c sugar
  • 2 c canned pumpkin
  • 1/2 c oil
  • 1/2 c fat free vanilla pudding
  • 4 large egg whites
  • 3 c flour
  • 2 tsp ground cinnamon
  • 1 1/4 tsp salt
  • 1 tsp baking soda
  • 1 c choc chips

    Combine first 5 ingredients in large bowl, stirring well with whisk. Combine flour, cinnamon, salt and baking soda in a medium bowl, stirring well with a whisk. Add flour mix to pumpkin, stirring just until mixed. Stir in chocolate chips.

    Divide batter into 2 (8x4) pans coated with cooking spray. Bake at 350 for 1 hour and 15 minutes or until cooked in center.
