Apricot Cinnamon Rolls
I dedicate this recipe to Mother. She loved apricots and I know she would have liked this version of cinnamon roll using her beloved apricots.
ingredients
- 1 1b. loaf frozen white bread dough
- 1 pkg. dried apricots
- 1 c. sugar
- 1/2 c. brown sugar
- 2 t. cinnamon
- 1 stick melted butter
- Icing ingredients:
- 2 C. powdered sugar
- 1-2 T. milk
- 1/2 t. vanilla
- 2 T. apricot jam
- Side Note: You can substitute peaches instead of apricots

Recipe Instructions
Thaw the bread dough and roll out to jelly roll size. While the bread dough is thawing simmer the apricots with 1/2 c. sugar in water until soft. Drain the water and mash them. Brush the dough with the melted butter. Combine the remaining 1/2 sugar, the brown sugar and the cinnamon and sprinkle evenly over the melted butter. Spread the apricot mix last over the top. Roll up the bread dough and cut into 3/4 - 1 inch thick slices for rolls. Put them in a greased baking dish with sides touching. Let rise for another 45 minutes to an hour and then bake for about 20 minutes at 400 degrees. While the rolls are baking combine the icing ingredients and set aside. When you take the rolls out, let them cool for 5 minutes and then drizzle icing on top.
