Mother's Homemade Pimento Cheese
I grew up on pimento cheese sandwiches or pimento cheese and Ritz crackers. Mother always made it herself and once you have had it fresh, you really don’t want “store bought” anymore.
ingredients
- 1 12 oz. block cheddar cheese, grated (Mother always called it rat cheese)
- 1 jar pimentos, chopped
- 1 c. mayonnaise
- 1/2 t. garlic powder
- salt and pepper to taste
directions
Recipe Instructions
mix the grated cheese and pimento together and then add the remaining ingredents. Chill for about an hour for the flavors to marry. Serve as a sandwich or with Ritz crackers.
A MeMe Memory of Mother
Mother and I went to Scotland together and had the time of our lives. We laughed so hard we hurt when we got stuck on a round-about. In Scotland, these are traffic circles that venture off in four directions. They drive on the left side of the road and once you get on the round-abouts it can be difficult to get off on the right road in heavy traffic. Mother was my navigator and she would say, you need to turn now, Sis. Well, I just couldn’t get in the correct lane so I kept going around in the circle. Mother finally just burst out laughing and said, “Guess we can just keep going in circles until you run out of gas”! It was a crazy and fun day.
