Tomato Puff Pastries

ingredients

  • Pepperidge Farms Puff Pastry Sheets (2 sheets per package)
  • Plum tomatoes, sliced
  • Shredded Cheddar Cheese
  • Olive oil
  • Fresh Thyme

    Pre-heat the oven to 400

  • 2

    Roll out the frozen puff pastry sheets and use a cookie cutter to cut out circles that are slightly larger than a tomato slice. Place the cut out puff pastries on top of a cookie sheet. Prick the puff pastry circles with a fork.

    Slice the tomatoes and finely chop the fresh thyme. Place in a bowl and lighly coat with olive oil.

  • 4

    Place a tomato slice in the center of a cut out puff pastry.

    Sprinkle shredded cheddar cheese on top of the tomato and puff pastry.

  • 6

    Bake in the oven for approximately 10-12 minutes or until the cheese is melted and puff pastry is golden
