Very Easy Pierogi Lasagna Casserole

ingredients

  • • 5 lbs potatoes
  • • 1 lb Velveeta (can also use mexican or pepper jack vel.)
  • • 1 lb lasagna noodles (u will only need 9 pot-noodle-pot-noodle end with pot on top)
  • • butter (get 4 pack of sticks)
  • • milk
  • • 1 1/2 lbs onion (1 big one)

    Cook potatoes in boiling salted water, drain, then mash. Add butter (stick and a half), milk and cheese.

    Butter a large casserole dish, 10 x 15. Cook lasagna noodles. Layer potatoes and noodles (potatoes on the bottom then noodles, potatoes...you get the idea. and end with pot on top.)

    Fry onions in lots of butter. ok THIS is what the book SAYS to do...Add last noodles, spoon remaining onions on top. (I don’t do that. I fry the onion and when im doing the mashed potatoes, i mix them in. i think it’s much better that way.)

    Bake at 350°, covered for 30 mins. uncover and bake for 15-20 mins. let stand for 10 mins. before serving.
