Banana Coconut Bread
ingredients
- “WET” INGREDIENTS
- 3 eggs
- 1 1/4 cup vegetable or canola oil
- 2 cups sugar
- 1 tsp. vanilla
- 1/4 cup orange juice
- DRY INGREDIENTS
- 3 cups flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 2 cups mashed banana (abaout 5 ripe bananas)
- 2/3 cup coconut
- 1 cup chopped walnuts (optional)
- 2/3 cup chocolate chips (optional)

Beat together wet ingredients with an electric mixer. Alternately add dry ingredients and mashed banana to the wet mixture, beating after each addition. Stir in coconut, nuts and chips with spoon. Pour into 2 greased loaf pans.

Bake in preheated 325 degree oven for approx. 1 hour. Test with toothpick for doneness. Cool for 20 min. before removing from pans.

We also use this batter for muffins. Bake for 20-25 min. Variation: Substitute 2 cups grated zucchini for mashed banana to make zucchini bread.
