Texas Caviar
Most of us Texans are too darned red neck to much on real caviar. We’d rather snack on heartier dips like this one and a cold longneck.
ingredients
- 1 lb. dried black eyed peas
- 2 c. italian dressing
- 2 c. finely chopped red and green bell pepper
- 2 c. finely chopped onion
- 1 c. finely chopped green onion
- 1/2 c. jalapeno pepper, finely diced
- 1 T. finely chopped garlic
- 1 c. whole kernel corn
- 1 can diced green chilies
- salt, pepper, and Tabasco to taste

Instructions to prepare
Soak peas in water for 6 hours. Drain and bring to a boil in fresh water. Cook for 40 minutes and drain well. In a large bowl, combine the peas and remaining ingredients. Chill for several hours to let the flavors marry. Serve with chips.
A MeMe Memory
Before Matt and Laura discovered she was having a boy, I experienced a dream. They had already decided if Laura was carrying a boy his name would be Jack Ryan and if she was carrying a girl, her name would be Lacey Dawn. I dreamed that a little blond haired boy and I were walking in a big field with grass blowing in the wind. We began to launch a kite into the air and it wisked it up quickly. We flew it and I knew the little boy must be our Jack. He was laughing at how funny the “big bird” looked in the sky. About the time I was going to remind him to hang on tightly, his fingers slipped from the kite string and the kite began to fly away in the blue sky. Jack began to cry and told me to get it. But I had to tell him that I couldn’t reach that far but we would get him another kite. I woke up and knew that Laura would be bringing us a Jack Ryan into the world.
