Enchilada Sauce
Make this delicious red sauce to dip your tortillas in before you roll them up with your hamberger. Pour the remaining over the finished enchiladas. It’s messy! But worth it.
ingredients
- 1/4 c. coconut oil
- 1 med. onion, minced
- 2 clove garlic, minced
- 1 (10oz.)can tomato paste
- 2 c. water
- 2 tsp. chili powder
- 1 tsp. vinegar
- 1 tsp. rapadura
- 1/2 tsp. oregano
- 1/2 tsp. salt
- 1/8 tsp. cayenne pepper

Combine oil, onion, garlic and tomato paste and simmer for 3 minutes. Add remaining ingredients and bring to soft boil. Reduce heat and simmer 15 minutes.

I often double this recipe. If I do’nt have tomato paste I always have a 24oz. of spaghetti sauce, that will work just fine.
