Lemon Cheesecake Squares
These were a hit at one of my jewelry open houses. Brian ate the left-overs and called them good.
ingredients
- Crust:
- 3/4c shortening
- 1/3C brown sugar
- 1 1/4C four
- 1C oatmeal
- 1/4t salt
- 1/2C seedless raspberry jam
- Filling:
- 4 pkg (8oz) cream cheese, softened
- 1 1/2C sugar
- 1/4C flour
- 4 eggs
- 1/3C lemon juice
- 4t grated lemon peel

1 in mixing bowl, cream shortening and brown sugar. Combine flour, oats, and salt; gradually add to creamed mixture.

2 Press dough into a greased 13X9X2 baking dish. Bake at 350 degrees for 15-18 minutes or until golden brown. Spread with jam.

3 For filling: beat cream cheese, sugar, and flour until fluffy. Add lemon juice, eggs, and lemon peel just until blended. Carefully spoon over the jam. Bake at 350 for 30-35 minutes until center is almost set. Cool on wire rack. Cover and store in refrigerator.
