Marinated New Potato Salad
A favorite at summer picnics - nice change from the heavy mayo-based potato salads.
ingredients
- 2 pounds fingerling potatoes cut in 1/8ths
- 1/2 cup sliced green onion tops
- 1 1/2 teaspoons chopped fresh parsley
- 1/2 cup chopped celery
- 1/3 cup chopped bell pepper
- 1 tablespoon dijon mustard
- 1/4 teaspoon pepper
- 1/2 teaspoon salt
- 2 teaspoons olive oil
- 2 teaspoons sugar
- 1 clove garlic
- 6 tablespoons vinegar (white wine, rice or apple cider)
directions
Boil potatoes 13 - 15 minutes (until just tender). Drain, rinse. Chill 30 minutes. Add celery, green onions, pepper and parsley. Mix vinegar, mustard, sugar, oil, salt and pepper, garlic - whisk. Pour over potato salad and toss gently. Chill at least one hour.
