Cheryl's Great Pumpkin Cookie
Andy’s favorite!
ingredients
- 4 cups flour
- 2 cups of quick or old fashioned oats
- 2 tsp baking soda
- 2 tsp cinnamon
- 1 tsp salt
- 1 1/2 cups of butter, softened
- 1 cup of sugar
- 2 cups of firmly packed brown sugar
- 1 egg
- 1 tsp vanilla
- 1 can 16 oz. pumpkin
- 1 cup chocolate chips
- optional: candies, raisins, nuts or m&m’s

1. Preheat oven 350.

2. Combine flour, oats, soda, cinnamon and salt. Set aside.

3. Cream butter, gradually add sugars, beating until light and fluffy. Add eggs and vanilla, mix well.

4. Alternate additions of dry ingredients and pumpkin, mixing well after each addition.

5. Stir in chocolate chips (or other additions).

6. Drop teaspoonfuls of dough onto lightly greased cookie sheet. Bake at 350 for 10-15 minutes.

7. Cool on racks.
