White Bean and Garlic Dip
This dip is an easy and refreshing alternative to the Ranch or Hummus usually found on the crudite table.
ingredients
- 2 cans reduced sodium cannellini beans, well-drained and rinsed
- 1-2 cloves garlic, to taste
- 1/2 cup reduced sodium chicken broth
- Juice and zest of 1 lemon
- 1/2 tsp black pepper, or to taste
- 1/2 tsp salt, or to taste
- 1 tbsp good quality olive oil

In a food processor, combine the beans, garlic, and lemon juice. Process until smooth. Add chicken broth to acheive desired texture. Season to taste with salt and pepper.

Cover and chill in refrigerator at least 2 hours. Just before serving, drizzle with olive oil and sprinkle with lemon zest. Served with vegetables or pita chips for dipping.
