The Forney Family's Huevos Rancheros (plus Guac and Salsa!)
This is originally my sister’s recipe, but has become a family favorite in the past year or two :) I hope this recipe will help you both remember your wedding in Mexico!!
ingredients
- Huevos:
- Tortilla
- Brown Rice
- Black Beans
- Shredded cheese
- Scrambled Eggs
- Salsa
- Guacamole
- Sour Cream
- Salsa:
- 5-6 Tomatoes, chopped (plum tomatoes work well)
- 1/2 small red onion, chopped finely
- 1 clove garlic, minced
- Juice of 1/2 lemon
- 2-3 tbsp cilantro, chopped
- Adobo to taste
- Guacamole:
- 2 avocados
- 1 plum tomato
- 1 tbsp lemon juice
- 1/2 small red onion, chopped finely
- 2 tbsp cilantro, chopped

Preparation instructions for the Huevos Rancheros:

Lay tortilla flat on serving plate. Add layer of cooked brown rice, then add the beans, and eggs.

Top with salsa and guacamole, and a dollop of sour cream if desired!

Preparation for the Salsa:

Combine ingredients in serving bowl. Serve immediately or cover and chill.

Peel, chop, and mash avocados in a bowl.

Add remaining ingredients.
