Soba Noodle Salad
mark bittman’s delicious warm soba noodle salad, with some tweaks
ingredients
noodles/salad- 1 package of soba noodles
- 1 bag frozen edamame
- 1 orange (or red or yellow) pepper
- 1 bag spinach
- sesame seeds
- fresh ginger
- scallions
- juice of 1 lime
- 2 tablespoons miso paste
- 1/2 cup tamari
- 1/4 cup rice vinegar
- 2 teaspoons sesame oil
directions

boil a pot of water. add edamame and let cook a few minutes.

add soba noodles to the boiling water slowly (not in 1 big clump.)

allow to cook together until soba noodles are tender

cube pepper.

while noodles are cooking, mix dressing ingredients. make sure miso paste is thoroughly mixed into liquid.

drain noodle/edamame mixture and place in a large bowl. toss with dressing. while noodles are still warm, add peppers and spinach. spinach should wilt from heat of noodles.

grate ginger over salad, and add scallions on top.
notes
use any vegetables you think will be good!
