Pumpkin Cake
This is a United Methodist Women favorite at South Roanoke Methodist Church
ingredients
- Bottom Layer
- 1 yellow cake mix, dry (reserve l cup for topping).
- 1/2 cup butter melted
- 1 egg
- Mix well and spread in bottom of a greased 9 x 13 dish.
- Pumpkin Layer
- 1 large can pumpkin
- 2 tsp. cinnamon
- 4 eggs
- 1 cup sugar
- 2/3 cup milk
- pinch of salt
- Mix all indg. well, spread over cake layer in dish.
- Topping
- 1/4 cup butter, softened
- 1/2 cup sugar
- 1 cup reserved cake mix
- 1 cup chopped pecans
- Mix and crumble evenly over the pumpkin layer.
directions
Bake at 350 degrees for 1 hr, to 1 hr and 15 minutes. Until center is set. Serve hot or cold, I like to serve it hot and add whipped cream, or cool whip, I use whipped cream. If you take it out it is better to use cool whip
