Basic Meat Sauce
ingredients
- 2 TBSP. Olive Oil
- 1 Pound Ground Beef
- 1 Onion, Chopped
- 2 Cloves Garlic, Minced
- 28-ounce Can Crushed Plum Tomatoes in Puree
- 6 oz. Can Tomato Paste
- 2 Cups Water
- 1 TBSP. Dried Basil
- 1 Bay Leaf, Broken in Half
- 1 tsp. Sugar
- 3/4 tsp. Salt
- 1/2 tsp. Pepper

Heat the olive oil in a large, heavy pot. Add the ground beef and onion and cook over moderate heat, stirring frequently, for about 10 minutes until the meat has lost its pink color. Add the garlic and cook for 1 minute.

Stir in all the remaining ingredients, bring to a boil, reduce the heat to low and cook gently, uncovered, for 30 minutes until the sauce is quite thick. If the sauce is too thick, stir in 1/2 cup of water or more.

Taste for seasoning and add more salt and pepper, if needed. This will depend on the saltiness of the tomatoes and tomato paste. The sauce can be refrigerated for up to 4 days and freezes very well.
