BBQ Fire-Roasted Artichokes
Outer base will char and be inedible, but the inside will be fully cooked and amazing!
ingredients
- 4 large artichokes
- 6 cloves garlic, thinly sliced
- 1/2C almonds, thinly sliced
- 1T salt
- 1T pepper
- 1 lemon, zested, seeded, peeled, and finely chopped
- 3/4C fresh oregano leaves
- 3/4C olive oil

1 Preheat BBQ grill.

2 Cut pointy tips and tops off artichokes by about one inch or so.

3 In mixing bowl, mix garlic, almonds, salt, pepper, chopped lemons, and oregano leaves until well blended.

4 Spread artichoke leaves apart, using fingers, until they are open like flowers. Divide the oregano mixture among artichokes and stuff it down between the leaves.

5 Drizzle 4-5T olive oil over each artichoke and place flowers up and into the coals - or on top of the grill. Cook, turning occasionally, for one hour. Discard charred outside and serve.
