Holiday Frittata
ingredients
- 2 eggs per person
- 8 oz. sliced mushrooms
- 6 stalks of asparagus
- 1 small onion, diced
- 8 oz. cubed ham
- splash of half and half
- 1 block of Gruyere cheese, grated
- salt and pepper
- olive oil

In a large nonstick skillet, cook the onion and mushrooms in a little olive oil until soft. Add the ham and cook until a little browned. At the last minute add the asparagus.

In a bowl, whisk together the eggs, half and half, and cheese. Season with salt and pepper.

Pour the egg mixture over the vegetables and ham. Bake in a 350° oven for about 50 minutes, until a knife comes out clean.
