Portuguese Rice Pudding

ingredients
- 2 Cups Rice (River Rice or Mahatama)
- 2 Cups Sugar
- 6 Egg Yolks
- 1/2 Gallon Whole Milk
- Pinch of Salt
- 1 Stick Butter
- 1 Cup Water
- Cinnamon

In large pan combine water, 3/4 of milk, rice and salt

Stir constantly on medium heat to avoid sticking

Bring to a boil, boil for 1 minute

Turn off heat, cover, and let sit on same burner for 30 minutes

Add remaining milk, butter, eggs, sugar, and extract
- 6
Cook over low fire until rice is cooked, approximately 30 minutes

Pour in dishes and sprinkle with cinnamon

You can substitute lemon extract for the vanilla extract Individual cups are perfect for parties
