Portuguese Soup
Caldo Verde
ingredients
- 3 Quarts Water
- 2 Links Chourico (chopped)
- 1 Beef Shank or Soup Bone
- 1 Box Frozen Kale (collard greens)
- 1/2 Bag Dried Green Split Peas
- 5 Cups Fresh Cabbage (chopped)
- 8 Small - Medium Potatoes (peeled and chopped)
- Salt
- Red Crushed Pepper (Pemento Muida)

Combine water, peas, chourico and soup bone
- 2
Cook 1 hour or until peas have dissolved on medium heat

Add kale and cook another 1/2 hour
- 4
Add cabbage and potatoes and cook another hour or until potatoes are done
- 5
Add salt and crushed pepper to taste

After potatoes are added I bring to a full boil for approximately 10 minutes then cover, turn off heat and leave on burner. Potatoes will continue to cook but not get mushy
