Cheesy Garden Casserole
ingredients
- 1 cup diced potato (1 medium potato)
- 1 cup diced zucchini (1 medium zuuchini)
- 1 cup diced carrots (3 medium carrots)
- 1/2 cup diced onion (1 medium onion)
- 1 cup water
- 1/4 cup all purpose flour
- 1/4 cup butter
- 1/4 teaspoon celery seed
- salt and pepper
- 2 cups milk
- 4 eggs, hard cooked and thinly sliced
- 1/2 cup grated cheddar cheese
- Topping:
- 1/4 cup butter
- 1/4 cup bread crumbs

1. Preheat oven to 400 degrees

2. In a large skillet, cook potatoes, zucchini, carrots and onion in water over medium- high heat until soft; drain.

3. Reduce heat to medium and return veggies to skillet, Sprinkle flour over veggies; stir to blend. Add next 5 ingredients. Cook 10 to 15 minutes, stirring occasionally, until thick.

4. Pour half of veggie mixture into greased oven proof dish. Top with sliced eggs and pour remaining veggie mixture over. Sprinkle cheese over veggie mixture.

5. For topping, melt butter and stir in bread crums. Spread bread crumbs evenly over cheese.

6. Bake 15 to 20 minutes, or until cheese is bubbly.
