White Chicken Chili
ingredients
- 3 lbs. chicken breast, chopped
- 2 cans chicken broth
- 16oz. frozen corn
- 2 cans white Northern beans, drained and rinsed
- 1/2 c chopped cilantro
- 1 c chopped onion
- 1 10ox. can Rotel tomatoes
- 1 c shredded Monterrey Jack Cheese
directions
Saute chicken and onion in large stock pot sprayed with Pam. Cook for five minutes until chicken is no longer pink. Stir in broth and tomatoes. Add corn and beans. Simmer 10-15 minutes until heated through. Ladle into bowls and top with cilantro and cheese. Serve with tortilla chips
