Thai Shrimp
ingredients
- 1 lb shrimp
- 2 small leeks, trimmed and julienned
- 2 T. minced ginger
- 1 tsp minced garlic
- 2 T sugar
- 1/2 tsp Thai curry paste
- 1 c. chicken stock
- 1/2 c. coconut milk
- 1/4 c. soy sauce
- chopped cilantro or scallion
- lemon juice

Clean shrimp
- 2
Saute leeks, ginger and garlic for 1-2 minutes

Add sugar and chili paste and cook 1 minute

Add stock, soy and coconut milk and bring to a boil,

Reduce heat and add shrimp. Simmer 6-8 minutes.

Add chopped cilantro and drizzle with lemon juice.

Serve over jasmine rice
notes
You could use another firm fish such as sea bass fillets or tilapia. Chicken works well too.
