Shrimp Pad Thai
This dish opened up the door to tofu for us. It’s a great recipe for whenever you crave a bowl of warm, spicy noodles as a comfort food. It always hits the spot!
ingredients
- 8 oz Flat thai rice noodles
- 1/4 cup fish sauce
- 1/4 cup sugar
- 2 tablespoons chili sauce
- 2 tablespoons lime juice
- 1/4 cup vegetable oil
- 1 lb shrimp
- 4 cloves garlic (chopped)
- 12 oz tofu, cut into cubes
- 6 radishes, cut into strips
- 4 scallions, cut lengthwise, in 1 inch strips
- 1/2 cup chopped peanuts
- 2 cups bean sprouts
- 2 jalepenos cut into long, thin strips
directions
Soak noodles in water for 10 minutes. Drain. Mix next 4 ingredients in bowl. Heat wok until very hot. Add oil and shrimp until grilled through. Remove. Add garlic and tofu, cook until golden. Add noodles and sauce. Add water if dry. Once noodles are soft, add radishes, scallions and peanuts. Toss in shrimp. Divide on plates and top with jalepenos and sprouts.
notes
Thai rice noodles can be difficult to find. I found them at Festival in the Asian food section. Don't substitute for other pasta, the rice noodles make the dish!
