White Chili
ingredients
- 1 large onion, chopped
- 2 cloves garlic, pressed
- 2 Tbls. oil
- 4 c. cooked chicken, chopped
- 2 tsp. cumin
- 4 cans chicken broth
- 1 tsp. dried basil
- 4-6 jalapenos, seeded & chopped
- 2 (16oz) cans Northern white beans
- 1 c. sour cream
- 1 c. shredded Monterey Jack
- 2 tomatoes, chopped
- 3 Tbls. fresh cilantro, chopped
- 3 tsp. chicken broth granules
directions
Cook onion and garlic in oil until soft. Add remaining ingredients, excluding sour cream, cheese, tomato and cilantro. Heat to boil. Reduce heat and simmer at least one hour. Whisk in sour cream and cheese right before serving. Top with tomatoes and cilantro.
