Polynesian Chicken
ingredients
- 1 Lb. Skinless, Boneless Chicken Breasts
- 2 Tbsp. Butter or Margarine
- 1 Medium Green Pepper, cut into 1" pieces
- Dash Pepper
- 15.25 oz. Can Pineapple Chunks, undrained
- 1/2 Cup, plus 2 1/2 Tbsp. Water, divided
- 1/3 Cup Apple Cider Vinegar or Distilled White Vinegar
- 2 Tbsp. Brown Sugar
- 2 Tbsp. Soy Sauce
- 1 Tsp. Ground Ginger
- 2 Tsp. Garlic Powder
- 2 1/2 Tbsp. Cornstarch
- Cooked, Buttered Rice
- Toasted Slivered Almonds

1. Cut chicken into 2 inch strips. In a large skillet, melt butter, then saute chicken and green pepper just until the chicken changes color. Season with the salt and pepper.

2. Stir in pineapple w/juice, 1/2 cup of the water and the next 5 ingredients. Cover; Simmer for 10-12 minutes or until chicken is cooked.

3. Combine cornstarch and the remaining 2 1/2 tbsp. of water; stir into chicken mixture. Cook until sauce is thickened; stirring constantly. Serve over rice. Garnish with almonds.
