Chicken Panini

This is my favorite panini sandwich. In fact, Jim enjoys it so much - we purchased a Breville panini maker!

ingredients

  • 2 Ciabatta Rolls
  • 2T. Sun-dried Tomato Aioli
  • 2 - 4oz Grilled Chicken Breasts
  • 2oz. Goat Cheese
  • Arugula

directions

    Grill chicken breasts.

  • 2

    Slice Open Ciabatta Rolls, and brush 1T. Sun-Dried Tomato Aioli onto each.

  • 3

    Add arugula, then chicken breast, then goat cheese.

  • 4

    Place in panini maker to melt cheese and grill bread.

notes

Brush chicken breast with a little olive oil, and use garlic or other flavorful southwestern spices to add a tasty zip.
