SANTA FE SALAD
ingredients
- Boneless skinless chicken breasts, baked or bbq’d and sliced diagonally
- 1 cup frozen corn, thawed
- 1/4 cup sun-dried tomatoes in oil, chopped
- 1/2 cup dates, chopped
- 1 avocado, chopped
- 1 jalapeno pepper, seeded and chopped
- 1/2 can cooked black beans, rinsed and drained
- Mixed greens
- Dressing:
- 1/4 cup extra virgin olive oil
- 1/4 cup fresh lime juice
- 1/2 cup cilantro, chopped
- 1/8 teaspoon salt
- 1/8 teaspoon pepper

Toss all ingredients together in large salad bowl.

Mix all together and toss into salad. For zestier dressing, add lime zest as well.
