Seafood Marinara Over Whole Wheat Pasta
Your kids won’t even know that they’re eating whole-wheat pasta when you serve this. If they don’t like seafood just remove some sauce before you add the shrimp and scallops.
ingredients
- 2 quarts water
- 8 ounces dry whole wheat spaghetti
- 1 tablespoon extra-virgin olive oil
- 2 cloves garlic, minced
- 1 onion, chopped
- 2 1/4 ounces sliced ripe olives
- 2 cups canned chopped tomatoes, undrained
- 3 tablespoons tomato paste
- 1/4 pound fresh mushrooms, sliced
- 1/4 teaspoon dried thyme leaves
- 1/4 cup chopped fresh basil leaves
- 1/4 cup chopped fresh parsley
- 1/8 teaspoon red pepper flakes
- 1/2 pound scallops
- 1/2 pound shrimp, peeled

Bring water to a boil and cook pasta according to package directions.

Meanwhile, combine oil, garlic and onion in a 2-quart casserole. Microwave on high for 1 minute. Add the olives, tomatoes and tomato paste. Cover with wax paper and cook on high for 4 minutes; stir. Add the remaining ingredients. Cover again and cook on high for 5 minutes. Stir and serve on top of drained spaghetti.
