Ginger Snacking Cake
This cake can be served with whipped cream with added a little icing sugar.
ingredients
- 8 T unsalted butter at room temp
- 2.5 c flour
- 2 t baking soda
- 2t ground ginger
- 1.5t cinnamon
- 1/2t ground cloves
- 1/2 t ground nutmeg
- 1/2 t salt
- 2t baking powder
- 2/3 dark brown sugar
- 1 c unsulfered molasses
- 1T grated ginger
- 2 large eggs lightly beaten

Boil 1 c water. Butter and flour cake pan. In a bowl combine boiling water and baking soda and set aside. Sift together flour, spices,salt and baking powder.

Beat butter, sugar and add molasses,grated ginger, baking soda mixture and flour mixture. Add eggs. Pour into buttered and floured baking pan.

Bake 350 degrees 30-32 minutes.

Let cool and sprinkle with powdered sugar.
