BLT POTATOES
ingredients
- 3 STRIPES OF BACON
- 1 1/2 POUNDS OF POTATOES
- 1/4 CUP OF GREEN ONIONS
- 1 CLOVE OF GARLIC
- 1/2 TSP OF SALT
- DASH OF BLACK PEPPER
- 1 CUP OF SEEDED TOMATOES

FRY BACON UNTIL CRISPS, RESERVE 2 TBSP OF DRIPPINGS. CRUMBLE BACON SET ASIDE. CUT POTATOES INTO 1/2 INCH CUBES. IN SAME SKILLET COMBINE POTATOES, ONIONS, GALRIC, PEPPER AND RESERVED DRIPPINGS. COVER AND COOKE OVER MEDIUM HEAT STIRRING FREQUENTLY UNTIL POTATOES ARE TENDER 10-12 MINUTES. STIR IN TOMATOES AND CRUMBLE BACON.
