Homemade Pizza (Dough and No-cook Sauce)

- Dough:
- 1 (1/4 oz) package dry yeast
- 1 c warm water (100-110°)
- 1 tsp sugar
- 2 Tbsp olive oil
- 3 c flour
- 2 Tbsp cornmeal
- Sauce:
- 1 (4 oz) can tomato paste
- 3/4 c water
- 1/4 c olive oil
- 2 cloves garlic, minced
- salt and pepper
- 1/2 Tbsp chopped fres oregano
- 1/2 Tbsp chopped fresh basil
- 1/2 Tbsp chopped fresh rosemary

Dissolve yeast in 3/4 c warm water. Sprinkle sugar over and let stand at room temperature for 15 minutes, until bubbly. Add olive oil to yeast mixture, then pour over flour along with remaining 1/4 c water. Mix with rubber spatula , then by hand, until dough forms a ball.

Turn out onto floured board and knead about 5 minutes until smooth. Place in an oiled bowl and cover with plastic wrap. Let rise, in warm place, until doubled in size (45-60 min).

When risen, punch dough down and turn onto a floured board again. Roll out to fit a 12-inch round pan. Sprinkle cornmeal in bottom of pan and drape dough onto pan. Top with sauce and toppings and bake for 15-20 minutes at 425°.

Mix together the tomato paste, water and olive oil. Mix well. Add remaining ingredients and mix well again. Let stand at room temperature for several hours to allow flavors to blend. No cooking necessary, just spread on dough.
