SCALLOPED SWEET POTATOES
Preheat oven to 375°.
ingredients
- 4 medium to large sweet potatoes
- 4 strips bacon
- 1 small onion, chopped
- 2 1/2 T. flour
- 1/2 t. salt
- 1/4 t. pepper
- 2 c. milk
- 1 1/4 c. shredded/grated Parmesan cheese

Peel potatoes; cut into 1/4" slices.

Place in boiling water. Cook 5-10 minutes until just tender. Drain; set aside.

Meanwhile, fry bacon until crisp, drain, crumble, set aside.

Cook onion in pan drippings.

Stir in flour, cook to a paste. Add salt, pepper. Add milk.

Cook and stir until slightly thickened.

Arrange sweet potatoes in a large casserole dish.

Sprinkle with bacon.

Pour milk mixture over top.

Sprinkle with cheese.

Bake at 375° for 20 minutes.
