Blueberry Banana Nut Bread
ingredients
- 3 cups flour
- 2 1/2 cups sugar
- 1 tsp baking soda
- 1/4 tsp salt
- 3 eggs, beaten
- 1 cup oil
- 1/2 cup buttermilk
- 2 tsp vanilla extract
- 1 cup mashed bananas
- 1 cup pecans, chopped
- 1 cup fresh or frozen blueberries

Combine flour, sugar, baking soda and salt in a large mixing bowl.

Combine eggs, oil and buttermilk in a small bowl. Add to dry ingredients stirring until dry ingredients are moistened. Do not beat.

Add vanilla, bananas and pecans. Stir well.

Gently stir in blueberries. Spoon batter into two greased and floured 5x9 inch loaf pans. (Several smaller pans may be used if preferred.)

Bake at 350° for approximately one hour or until a wooden toothpick inserted in the center comes out clean.

Cool in pan 10 minutes; remove from pan and place on wire rack to cool completely.
