Hot Oil Marinade
This marinade is a perfect tenderizer for beef. Even if your guest likes a well done steak, this marinade will ensure it still tastes fabulous. Hot oil is a condiment the Chinese always have on hand. (So do I!) It’s a snap to make and very useful to have for pepping up a marinade, sauce, stew, or even, occassionally, as salad. It keeps indefinitely in a closed jar.
ingredients
- HOT OIL
- 1 cup Peanut Oil
- 3 tablespoons Hot Red Pepper Flakes
- MARINADE
- 1/2 cup Hot Oil
- 1/4 cup Soy Sauce
- 1 large clove garlic, chopped

Heat the oil and pepper flakes very slowly for 1/2-1hour. Let the oil cool and strain it into a small bottle or cruet. Close tightly.

Mix the ingredients together with a fork or whisk.

I let the oil cook until it is a beautiful red color.
