Garlic Steak Marinade with Sherry and Rosemary
If you love the flavor of garlic, you will find this garlic steak marinade to be one of the best steak marinade recipes of all time. The garlic is gently cooked and combined with aromatic rosemary, tangy mustard, and soy sauce for a rich yet delicate flavor. Dry sherry adds a wonderful flavor too. This garlic steak marinade recipe is then boiled and used as a sauce. You need to let the steak rest for fifteen minutes after cooking, then slice it diagonally and pour the thick, rich sauce over the top. Rice or mashed potatoes go nicely with this garlic steak marinade meal.

- 1/4 cup vegetable oil
- 4 cloves garlic, finely chopped
- 1 tablespoon chopped fresh or 1 teaspoon dried rosemary leaves, crushed
- 1/2 teaspoon ground dry mustard
- 2 teaspoons soy sauce
- 1/4 cup red or white wine vinegar
- 1/4 cup dry sherry or apple juice

Heat oil in 10-inch skillet over medium-high heat. Cook garlic in oil, stirring frequently, until golden. Stir in rosemary, mustard and soy sauce; remove from heat. Stir in vinegar and sherry; cool.

Place 1 to 1 1/2 pounds boneless or 3 to 4 pounds bone-in beef, pork or lamb in shallow glass or plastic dish. Pour marinade over meat. Cover and refrigerate up to 24 hours.

Remove meat from marinade; reserve marinade.

Place marinade in a sauce pan and bring to a boil let boil for a 5 minutes to kill any bacteria in the marinade turn of heat and allow to cool slightly.

Cook meat as desired, brushing occasionally with marinade.

Remaining marinade may be boiled to serve as a sauce. Heat marinade to boiling, stirring constantly; boil and stir until it thickens to the desired consistency, and serve with the cooked meat as a steak sauce.
