Steak Bruschetta
Great recipe for the men, especially. I used a winter runner, bought in Waukon, as a background. And the Hawkeye koosie because this is an easy recipe for tailgating.
ingredients
- 24 slices baguette
- olive oli
- 1 garlic clove, halved
- 3/4 lb. boneless sirloin steak
- salt and pepper
- 1 c. light mayo
- 1 c. blue cheese, crumbled
- 2 Tbsp. white wine vinegar
- 1 tsp. dry mustard
- 1 1/2 c. tomatoes, seeded and chopeed
- 14 c. fresh basil, chopped
- 2 Tbsp. olive oil
- basil leaves (garnish, optional)

Preheat grill to 450°.

Btrush baguette slices with oil and toast 3-5 minutes or until golden. Let cool; rub with garlic.

Mix mayo, blue cheese, vinegar and mustard together. In a second bowl, toss tomates, basil and oil.

Heat skillet to medium high (or grill)

Sear steak for 4-5 min. on each side (medium rare)or cook to desired doneness. Remove from grill and let rest 10 min., then dice. Add to tomato mixture and salt and pepper to taste.

Spread cheese mixture on bread, top with steak mixutre. Garnish.

Per bruschetta Cal: 105 Fat 9 g Fiber:0 g Sodium: 92 mg Carb: 2 g. To tailgate: Do bread at home, wrap in plastic wrap. Put cheese mixture and tomato mixture in plastic bowls. Grill steak at tailgate and dice. Assemble
