Grilled Peach Salad with Balsamic Vinaigrette
ingredients
- 3 Tablespoons balsamic vinegar
- 1 Tablespoon Dijon Mustard
- 1 garlic clove, crushed; optional
- 1/2 cup olive oil
- Salt and freshly ground pepper
- 4 to 6 peaches
- Goat Cheese or Feta Cheese; to taste
- 3 Scallions, sliced
- 1/2 cup candied Pecans
- Bag of Romaine Lettuce

In a small bowl, combine the vinegar, mustard and garlic. Add the oil in a slow steady stream, whisking constantly. Season with salt and pepper; to taste

Half the peaches and remove the pit. Toss the peaches with olive oil and balsamic. Grill the peaches face down for five minutes. Remove the peaches from the grill and dice.

Toss the peaches with the rest of the ingredients. Drizzle vinaigrette, toss the salad and serve.
