Strawberry glazed Cheesecake
This is my favorite cheesecake that my mom makes! Yummy!
ingredients
- Crust-
- 3/4 c. chopped walnuts
- 3/4 c. crushed graham crackers
- 3 T. melted butter
- Filling-
- 4 8 oz. cream cheese
- 4 eggs
- 1 1/4 c. sugar
- 1 T. fresh lemon juice
- 2 tsp. vanilla
- Topping-
- 2 c. sour cream
- 1/4 c. sugar
- 1 tsp. vanilla
- Glaze-
- 1 qt. strawberries
- 1 12 oz. raspberry jam
- 1 T. corn starch
- 1/4 c. Contreau
- 1/4 c. water

Combine ingredients and press them into the bottom of the pan. Lightly butter the spring form pan.

Beat cream cheese until smooth and then add eggs, sugar, lemon juice, and vanilla. Beat thoroughly and pour over crust. Put it in the oven at 350. 10”pan- 40-45 min 9” pan- 50-55 min

Remove from oven and let it sit for 15 min.

Topping-

Combine ingredients and chill them. When the cake is done baking, spoon it over the top. Return it to the oven and bake for 5 min. Let it cool and refrigerate (can be made up to 3 days before).

Glaze-

Combine a little jam with cornstarch in pan. Add jam, Contreau, and water. Cook over medium heat until thick and clear, about 5 min. or to lukewarm. Pour over berries.
