ingredients

  • For the Dressing:
  • 6 Tbsp rice vinegar
  • 6 Tbsp vegetable oil
  • 5 Tbsp creamy peanut butter
  • 3 Tbsp brown sugar
  • 3 Tbsp soy sauce
  • 2 Tbsp minced fresh ginger
  • 1 1/2 Tbsp minced fresh garlic
  • For the Slaw:
  • 5 C thinly sliced green cabbage
  • 2 C thinly sliced red cabbage
  • 2 C shredded napa cabbage
  • 2 large peppers (red and/or yellow)
  • 2 medium carrots, peeled and cut into matchstick-sized strips
  • 8 large green onions, cut into matchstick-sized strips
  • 1/2 C chopped fresh cilantro

directions

Whisk together all dressing ingredients and let stand at room temperature for 30 minutes. Mix all slaw ingredients together and toss with dressing just before serving.
