Julie Wiggins' Asian Super Slaw
ingredients
- For the Dressing:
- 6 Tbsp rice vinegar
- 6 Tbsp vegetable oil
- 5 Tbsp creamy peanut butter
- 3 Tbsp brown sugar
- 3 Tbsp soy sauce
- 2 Tbsp minced fresh ginger
- 1 1/2 Tbsp minced fresh garlic
- For the Slaw:
- 5 C thinly sliced green cabbage
- 2 C thinly sliced red cabbage
- 2 C shredded napa cabbage
- 2 large peppers (red and/or yellow)
- 2 medium carrots, peeled and cut into matchstick-sized strips
- 8 large green onions, cut into matchstick-sized strips
- 1/2 C chopped fresh cilantro
directions
Whisk together all dressing ingredients and let stand at room temperature for 30 minutes. Mix all slaw ingredients together and toss with dressing just before serving.
