Island Chicken
A perfect blend of sweet and sour and beautiful colors and sauce. May your life together be filled with many sweet moments (and only a few sour ones). This is a real comfort food dish that we just love every time we prepare it. Enjoy!
ingredients
- 1 can about 8 ounces pineapple chunks in syrup or juice
- 3 boneless chicken breasts cut into small pieces
- 2 tablespoons oil
- 1 can chicken broth
- 1/4 cup vinegar
- 2 tablespoons brown sugar
- 2 teaspoons soy sauce
- 1 large clove of garlic minced
- 2 green, red or yellow peppers cut in squares
- 6 tablespoons cornstarch
- 1/4 cup water

Drain pineapple chunks, reserving liquid.

Dredge chicken pieces in 3 tablespoons cornstarch and brown in skillet.

Add reserved pineapple liquid, broth, vinegar, sugar, soy and garlic. Cover, cook over low heat 20 minutes.

Add pepper and pineapple chunks; cook 15 minutes more until done stirring occasionally.

Combine the rest of the cornstarch and water; gradually stir into sauce. Cook, stirring until thickened. Serve with cooked rice.
