Joan's Peoria Chili
I usually make this for the Super Bowl!!!
ingredients
- 2 Tbsp oil
- 2 cups chopped onion
- 1 tsp chopped garlic
- 1 cup chopped green pepper
- 2 lbs ground beef
- 4 cans (1 lb each) tomatoes
- 4 cans (1 lb each) kidney beans
- 2 cups water
- 1 1/2 Tbsp salt
- 1/2 tsp crushed red pepper
- 3-4 Tbsp chili powder (to taste)
- 1 can tomato paste

Heat oil in soup pot. Add onion, garlic and green pepper. Saute until crisp-tender. Remove sauteed vegetables with slotted spoon.

Add ground beef and cook until well browned. Stir frequently and break up meat as it browns. Add additional oil, if necessary.

Add sauteed vegetables to browned meat along with remaining ingredients. Bring to a boil.

Reduce heat and simmer over low heat 3 to 4 hours, stirring frequently.

Taste after 2 hours and season with additional chili powder, salt and pepper if needed.
