Edamame Salad
About the only thing better than saying ’edamame’ is eating ’em!
ingredients
- 1 package Edamame beans (shelled)
- 2-3 tbl Red bell pepper, diced finely
- 1 tsp Black sesame seeds
- 1 tsp White sesame seeds
- Splash of sesame oil
- Splash of peanut oil
- Splash of rice wine vinegar
- Salt to taste

The proportions listed are a guess (I’m at a computer, not in the kitchen yaknow?)

Cook edamame according to package as it will differ depending on whether they are fresh or frozen.

Mix everything together and chill for a few hours to let the flavors meld.

You can mix it up by adding all kinds of other things: finely diced red onion, corn, mandarin oranges, etc.

We had this at Dean and Deluca in Napa Valley. This cold salad rocked -- not as much as the prosciutto panini, but how are beans gonna trump pig?
